In 1650 the first ship loaded with Cheshire cheese sailed from Chester to London. So popular was it that within a few years several pubs in London were called 'The Cheshire Cheese'. This trade led to important changes in the shape of rural life in the north west. In the course of charting these developments Charles Foster provides fascinating details about daily life on the farms, the people who worked the land and the men who sailed the ships between London and north western ports.

The activities of over 150 of the cheesemongers and ships' captains who worked this trade between 1680 and 1800 are described and the rich and unusual collections of the Arley Estate in Cheshire are used to provide a vivid picture of life on the cheese producing farms around 1750.
